京都、大阪のイタリアン、フレンチで約8年働いた後、自分にとってのイタリア料理とは何か?その答えを探す為に2011年に渡伊。マンマの味わいから星付きレストランまで、様々なスタイルの店で料理を学び、2014年に帰国。2店舗で料理長を経験し、2022年、独立。シンプルながら記憶に残る美味しさを日々追求してます。
I worked with Italian and French cuisines for about eight years in Kyoto and Osaka. After that, I wondered what Italian cuisine is from my point of view. I went to Italy in 2011 to search for that answer. I learned cooking at various styles of restaurants, from those featuring the taste of Mamma’s cooking to starred restaurants. Then I returned home in 2014. I gained experience as a head chef at two restaurants. And then I went independent this spring. Every day, I pursue deliciousness that is simple but remains in your memory.
